Also called Soya Beans, these beans contain the most protein of all the beans. Called the "meat of the soil" they are also an excellent source of Fat, Lecithin, Vitamins A, B, and E, Calcium, Potassium, and Phosphorus. These are round in shape about the size of a pea and are a light creamy-yellow color.
HINTS: They take about 3-3 1/2 hours to cook following a presoak. These will put on hearty roots if a brick or weight is placed on them when sprouting.
